Arisi (Rice) Upma

Arisi Upma, a traditional South Indian dish, celebrates the simplicity of rice in a delightful culinary experience. I used to go to my cousin Padmini’s place to relish it with ghee and sugar which is the yummiest way to enjoy this simple, yet irresistible upma.

Ingredients
  

  • 1 cup Raw rice
  • 1/4 cup Toor dal
  • 2 1/2 cups Water
  • Coarsely dry grind rice and dhal together. It should NOT be fine like rava. This is the 'upma flour'

Seasoning

  • 2 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1 tsp Chana Dal (Bengal gram)
  • 1 tsp Split Urad dal
  • 2 Dried Red Chilies broken into halves
  • 1 sprig Curry leaves
  • Salt to taste

Instructions
 

  • Heat oil in a pan, add ingredients under seasoning one at a time and saute till the dhals turn light brown.
  • Add water and salt.
  • When the water starts boiling, reduce the flame to medium and add the upma flour slowly while mixing it using a whisk. This prevents forming lumps.
  • Once it is mixed well, lower the flame and cover it with a lid. Let it cook for about 10 minutes or until cooked.

Tips

  • Do not add any veggies to this and make it like rava upma. This is one very easy recipe and tastes good as is. Quick tiffin to make, when you have surprise guests.
  • The best way to eat Arisi upma is with some ghee and sugar. You can also have it with coconut chutney. Tastes soooooo good….
