Chicken Coriander Soup

Chicken Coriander Soup

Ingredients
  

  • 1 tbsp Oil
  • 1 tsp Oil
  • 2 tbsp Garlic minced
  • 1 tbsp Ginger minced
  • 2 Green Chilies cut into halves
  • 1/2 tsp Black peppercorns
  • 1/2 tsp Ground Black pepper
  • 2 tbsp Lemon Juice
  • 1 cup Coriander (Cilantro) Leaves with stem chopped
  • 3 tbsp Coriander (Cilantro) Leaves chopped
  • 1 lb Chicken Breast (boneless & skinless)
  • 1/2 cup Cabbage thinly sliced
  • 1/2 cup Carrots thinly cut
  • 3 cups Water
  • 2 cups Chicken Broth
  • 1 tbsp Cornstarch mix it in 1/3 cup water
  • Salt to taste

Instructions
 

  • Turn Instapot to Saute (more) mode, add minced garlic, ginger, green chillies and coriander stems and mix well.
  • Add chicken breast, black pepper corns, salt and mix well.
  • Next, pour in water and stock. Give it a quick mix.
  • Close Instapot and with pressure valve to sealing. Pressure in high for 10 minutes and let the pressure release naturally.
  • Open the lid, take out the chicken breasts, shred into small pieces using a fork. Strain the broth and reserve it aside.
  • Turn Instapot to Saute (medium) mode, heat 1 tbsp oil. Saute the carrots and cabbage for a minute.
  • Add shredded chicken, reserved broth and cornstarch water.
  • Mix well and bring the soup to a gentle boil. Turn the Instapot off. Add fresh black pepper, chopped coriander and lemon juice. Serve hot.

Tips

  • You can also follow the same recipe on stovetop using a pot. Add the ingredients to saute in the beginning and after adding chicken, broth and water, let it boil and reduce the flame to low/medium for half hour or until the chicken is cooked tender. Rest of the recipe is the same as above.
  • Broth while it adds more flavor it is optional, if you don’t have it, just use more water.
