Melt the butter in a large pot. Add the onion and carrot and cook for couple of minutes until the onions begins to turn soft.
Stir in the flour and cook for a minute in low flame, stirring constantly.
Next, pour in the stock and water. Give it a quick mix and bring it to a boil. Lower the heat, cover and simmer for about 20 mins until the vegetables are tender.
Stir in the oats and chopped spinach and cook for 15 mins longer, stirring from time to time.
Add the cream and season well. Serve hot with a side of sandwich or salad.
