Spinach Oats Soup

Ingredients
  

  • 1 tbsp Unsalted butter
  • 1 Onion minced
  • ½ cup Finely chopped carrot
  • 1 tbsp All-purpose flour
  • 4 cups Vegetable stock (OR) Chicken stock
  • 2 cups Water
  • 1/2 cup Steel cut Oats (OR) Instant Oats
  • 2 cups Chopped Spinach
  • 2 tbsp Heavy cream
  • Salt & Pepper to taste

Instructions
 

  • Keep all the ingredients ready before you start making the soup.
  • Melt the butter in a large pot. Add the onion and carrot and cook for couple of minutes until the onions begins to turn soft.
  • Stir in the flour and cook for a minute in low flame, stirring constantly.
  • Next, pour in the stock and water. Give it a quick mix and bring it to a boil. Lower the heat, cover and simmer for about 20 mins until the vegetables are tender.
  • Stir in the oats and chopped spinach and cook for 15 mins longer, stirring from time to time.
  • Add the cream and season well. Serve hot with a side of sandwich or salad.

Tips

  • Celery can also be added along with carrots.
