Spinach Oats Soup
A classic Irish soup, that combines spinach, oats, and carrots into a nourishing, golden-hued bowl of comfort. Packed with wholesome goodness and subtle flavors, it’s a hearty, rustic dish that soothes and satisfies. Perfect for cozy evenings or a taste of Ireland’s traditional culinary charm.
Ingredients
- 1 tbsp Unsalted butter
- 1 Onion minced
- ½ cup Finely chopped carrot
- 1 tbsp All-purpose flour
- 4 cups Vegetable stock (OR) Chicken stock
- 2 cups Water
- 1/2 cup Steel cut Oats (OR) Instant Oats
- 2 cups Chopped Spinach
- 2 tbsp Heavy cream
- Salt & Pepper to taste
Instructions
- Keep all the ingredients ready before you start making the soup.

- Melt the butter in a large pot. Add the onion and carrot and cook for couple of minutes until the onions begins to turn soft.

- Stir in the flour and cook for a minute in low flame, stirring constantly.

- Next, pour in the stock and water. Give it a quick mix and bring it to a boil. Lower the heat, cover and simmer for about 20 mins until the vegetables are tender.

- Stir in the oats and chopped spinach and cook for 15 mins longer, stirring from time to time.

- Add the cream and season well. Serve hot with a side of sandwich or salad.


Tips
- Celery can also be added along with carrots.
