Bhatura was my childhood (OK, agree, even now ) obsession – those fluffy, golden clouds of deliciousness! And let’s not forget the fried green chili on the side, adding that perfect spicy kick. Heaven!

Bhatura
Bhatura is a popular Indian bread, known for its fluffy, golden, and slightly tangy texture. Made from refined flour and yogurt, it's deep-fried to perfection, resulting in a soft and airy delight. Often served with spicy chickpea curry (chole), bhatura is a favorite dish for brunch or special occasions.
Ingredients
- 2 cups All-purpose flour Yes, it has to be all-purpose
- 1/4 cup Rava (Sooji/Semolina)
- 2 tsp Sugar
- 1 tsp Salt
- 1 pinch Baking soda
- 1 cup Yogurt
- 2 tsp Ghee
- Milk if needed should be lukewarm
- Oil for deep frying the bhaturas
Instructions
- Now, let's knead!
- To a large mixing bowl, add all the dry ingredients (all-purpose flour, rava, sugar, salt, baking-soda) and mix it all in.
- Now gradually add the yogurt and keep kneading it slowly. Add a little milk if needed and knead it to a smooth soft ball of dough. Keep it covered at least for an hour.
- After an hour, add 2 tsp ghee to the dough and knead it again for 2 mins. Divide the dough into 9 equal parts and roll it into smaller balls.

Let's roll the parathas!
- Take one dough ball and dredge in flour. Roll it out flat with a rolling pin. It shouldn't be too thin.
- Deep fry in hot oil. The bhaturas are now ready.
Tips
- The dough can be stored in a box for 2 days.
