Bhatura was my childhood (OK, agree, even now ) obsession – those fluffy, golden clouds of deliciousness! And let’s not forget the fried green chili on the side, adding that perfect spicy kick. Heaven!

Ingredients
  

  • 2 cups All-purpose flour Yes, it has to be all-purpose
  • 1/4 cup Rava (Sooji/Semolina)
  • 2 tsp Sugar
  • 1 tsp Salt
  • 1 pinch Baking soda
  • 1 cup Yogurt
  • 2 tsp Ghee
  • Milk if needed should be lukewarm
  • Oil for deep frying the bhaturas

Instructions
 

  • Now, let's knead!
  • To a large mixing bowl, add all the dry ingredients (all-purpose flour, rava, sugar, salt, baking-soda) and mix it all in.
  • Now gradually add the yogurt and keep kneading it slowly. Add a little milk if needed and knead it to a smooth soft ball of dough. Keep it covered at least for an hour.
  • After an hour, add 2 tsp ghee to the dough and knead it again for 2 mins. Divide the dough into 9 equal parts and roll it into smaller balls.

Let's roll the parathas!

  • Take one dough ball and dredge in flour. Roll it out flat with a rolling pin. It shouldn't be too thin.
  • Deep fry in hot oil. The bhaturas are now ready.

Tips

  • The dough can be stored in a box for 2 days.
