Vendakkai Thuvattal (Okra Stir Fry)

Vendakkai Thuvattal (Poriyal) is an easy South Indian dish featuring okra sautéed with curry leaves, and aromatic spices like turmeric and sambar powder. This flavorful and nutritious side dish pairs perfectly with rice and dal / sambar for a wholesome meal. I have grown up hearing from my parents, that eating okra increases Math skills 🙂

Vendakkai Thuvattal (Okra Stir fry) is a flavorful South Indian dish with okra, curry leaves, and spices. Its simple – marinate okra, then stir-fry with oil and curry leaves until well roasted.

Ingredients
  

  • 1 lb Vendakkai (Okra)  cut to 1/4 inch thickness
  • 1 1/2 tsp Sambar powder (adjust to the spice level you prefer)
  • 3 tbsp Yogurt
  • Salt to taste

Seasoning

  • 2 tsp Sesame Oil
  • 1 sprig Curry leaves

Instructions
 

  • Mix the Sambar powder, salt & Yogurt. Marinate the okra in the mixture for an hour
  • In a pan heat Sesame oil, add fresh curry leaves, followed by the marinated okra.
  • Keep the pan in medium flame, keep stirring in frequent intervals so the okra does not get burnt. You don’t have to cover the pan.
  • Once you see that the okra is cooked, raise the flame and cook them till well roasted and dry. Yummy yummy….

Tips

  • Non stick pan is good for this recipe.
  • Pat dry the okra after washing and then cut them into small pieces. If it’s wet, the okra becomes too sticky.
  • Do not add too much yogurt, that will give a slimy result.
