Avarakkai Thuvattal (Flat Beans Stir Fry)

Ingredients
  

  • 1 lb Avarakkai (Flat beans) chopped
  • 2 tbsp Coconut (optional) grated
  • 3 Salt to taste

Seasoning

  • 1 tsp Oil
  • 1/2 tsp Mustard seeds
  • 1 tsp Urad dhal
  • 2 Red Chilis broken into halves
  • 1/4 tsp Hing (Asafoetida)
  • 1 sprig Curry Leaves

Instructions
 

  • Heat oil in a pan, add ingredients under seasoning one at a time and saute till the urad dhal turns golden in color.
  • Add the chopped flat beans and salt and mix well.
  • Sprinkle some water (about 1/4 cup) for the beans to get cooked and cover it with a lid. Keep the pan in medium low flame.
  • Keep stirring in intervals to see that water has not dried up.
  • If the beans is not yet cooked, sprinkle some more water and cover it and cook till the beans are tender and soft.
  • Finally, add the coconut, mix well and turn it off.

Tips

  • You can have this as a side for sambar rice, rasam rice or dal rice.
  • You can also steam the flat beans separately in a vegetable steamer and make the same recipe with the seasonings listed. You don’t need to sprinkle water with the beans since they are already steamed.
  • The same method can be followed for other vegetables like Carrot, Green Beans, Beetroot, and Runner beans.
