Paneer Paratha

Paneer paratha is a standard lunch box food for my kids. Made with simple ingredients, these parathas are great for breakfast but it can be eaten at any time of the day.

Servings 6 medium sized paratas

Ingredients

For paratha dough

  • 2 cups Wheat flour
  • 1 tsp Ajwain (Carom seeds) Crush between palms and add for enhanced flavor.
  • ½ tsp Salt
  • ¾ to 1 cup Lukewarm water
  • 1 tsp Oil

For paneer stuffing

  • 400 gms Paneer finely grated
  • ½ tsp Amchur (Dry mango) powder
  • 3 tbsp Chopped Curry leaves
  • 4 Green chillies finely chopped
  • ½ tsp Garam masala optional
  • 1 tsp Salt
  • Oil as required for making the parathas

Instructions

  • Now, let's knead!
  • Mix all the dry ingredients for dough. Add water as needed and start kneading the dough till it becomes soft and smooth. Finally add a tsp of oil and mix it well. Keep the dough aside for 30 mins.
  • Make it into balls and keep them ready to be rolled.

Let's make the filling!

  • Prepare the stuffing by simply mixing all the ingredients that are under 'stuffing' except the oil. Taste test for salt and spice level. If you like it spicy, add few more chopped green chillies.
  • Make nice and big sized paneer balls. It should be almost the same size as the dough balls.

Let's roll the paneer parathas!

  • With a rolling pin, roll the dough ball into a circle of about 4 inches in diameter. You could also shape the dough ball into a cup using your fingers, starting from the center of the ball. This is how I do it since it is easy to hold it and stuff.
  • Place one paneer ball on the circle and cover it up.
  • Sprinkle some flour and roll the stuffed paratha to a circle of about 6 inches in diameter.
  • Transfer it to a hot tawa and cook on both sides drizzling some oil or ghee each side, until golden brown spots appears.
  • Remove it from heat once done. Serve it as is with some mint chutney or coriander chutney or pickle and onion salad on the side. Enjoy flavorful, nutritious parathas hassle-free!

Tips

  • This can be great for lunch boxes along with some Potato fry or spread some pickle and make as paratha rolls.
  • Oil or ghee can be used for making the parathas.
