Crispy Ghee Kaaram Dosai

This crispy dosa is spread with a spicy, flavorful chutney and finished with a generous drizzle of ghee, giving it a delicious combination of heat, tang, and richness. “Kaaram” means hot and spicy, and this dosa certainly lives up to its name! My close Telugu friend makes a similar spicy chutney dosa, which I have tasted at her home and absolutely loved. This version is inspired by that delicious memory.

Ingredients
  

  • 3 cups Dosa batter
  • Ghee for making the dosas

To Grind

  • 1 big Red Onion roughly chopped
  • 6 cloves Garlic
  • 2 Tomatoes roughly chopped
  • 10 Red Chilies
  • 4 Kashmiri Red Chilies mainly for the fiery red color
  • Salt as needed for the chutney

To Season the Chutney

  • 2 tsp Gingely oil (or) Any oil of your choice
  • 1 tsp Mustard seeds
  • A sprig of Curry leaves finely chopped

Instructions
 

Let’s Make the Chutney

  • Add all the ingredients listed under “To Grind” to a blender and grind without adding any water.
  • Heat gingelly oil (or your preferred oil) in a pan. Add mustard seeds and chopped curry leaves. Once they splutter, add the ground chutney mixture.
  • Cook on medium heat, stirring occasionally, until all the moisture is absorbed and the chutney becomes thick. Check the salt and set aside to cool.

Let’s Make the Dosa

  • Heat a dosa tawa until hot. Pour about two ladles of dosa batter and spread into a thin, even dosa.
  • Drizzle ghee around the edges and spread a generous layer of the prepared chutney all over the dosa. Drizzle a little more ghee on top.
  • Carefully flip the dosa and cook on low to medium heat so the chutney doesn't burn.
  • Cook until crisp, then flip it back, fold thr dosa and serve hot.

Serve & Enjoy

  • Enjoy this spicy, crispy dosa with coconut chutney, or simply eat it on its own—it is delicious either way!

💛 Lakshmi’s Tips

  • For an extra-crispy dosa, let the first side brown well before flipping.
  • Grind the chutney without water so it cooks down into a thick, spreadable consistency.
  • Of course, it goes without saying – Enjoy the dosa with a cup of hot filter kaapi (coffee)
