Muttai Dosai is a standard breakfast at my house since it is sooo easy 🙂 to make and I love eggs in any form. Honestly I just make the way I described in the last tip in this recipe and enjoy it with a cup of kaapi….

Muttai (Egg) Dosai
Muttai dosai, a South Indian delight, features a thin, crispy dosa enveloping a savory egg filling. Served with chutney and sambar, it's a flavorful and satisfying breakfast or snack option.
Ingredients
- 2 cups Dosai batter
- 4 Eggs
- 1 Red Onion finely chopped
- 2 Green chillies finely chopped
- 1/2 tsp Salt
- Oil
Instructions
- In a bowl, break one egg at a time, add some chopped onion, green chilli and salt and whisk this egg mixture and keep aside.
- Heat the dosa pan, pour a ladleful of dosai batter and spread it evenly in a spiral motion from inside to out.

- Pour a tsp of oil around the edges. Pour the egg mixture on the dosai and spread it evenly all over the dosai. After a few seconds, flip it over and cook for a few seconds again till the egg and onions get cooked.

- Once done, remove the dosai on a plate and serve it hot with some milagai podi and oil. Proceed the same way with the remaining batter and eggs.

Tips
- Have the dosa with a cup of hot filter kaapi (coffee)
- You can also add in some chopped coriander leaves to the egg mixture. Sprinkle some podi on the dosai while making it. I sometimes add grated cheddar cheese on it and it is sooooo heavenly….

- If you don't have time to chop onions and chilies, just break an egg on the dosa while it's still on the pan, spread it out evenly with the spatula, sprinkle some salt and pepper or any spice you wish and enjoy. Remember to flip it over and cook the egg dosai 🙂
